Not to mention the fact that sometimes a s’mores craving hits on a random Tuesday when you have no chance of hunting down a campfire. These S’mores Cookie Bars solve that problem entirely — no fire required, no sticky fingers, no marshmallows lost to sudden flames… just a pan of gooey, chocolate-and-marshmallow-loaded cookie bars built right on top of a graham cracker crust.

Fun fact: the s’more itself has been around since at least 1927, when the Girl Scout Handbook printed a recipe for “Some More’s” — proof that we’ve been trying to improve on the campfire classic for almost a hundred years now, and I’d say we’ve succeeded.

What Ingredients Do You Need for S’mores Cookie Bars?

  • Graham crackers — these form the bottom crust, just like the base of a real s’more.
  • Butter.
  • Brown and white sugar.
  • Eggs and vanilla..
  • Flour, salt, and baking soda.
  • Semi-sweet chocolate chips.
  • Mini marshmallows — mixed in AND sprinkled on top, because one layer of marshmallow is never enough.
  • Hershey’s chocolate bars. Of course.

How Do You Make S’mores Cookie Bars?

Start by lining your pan with parchment paper, leaving some overhang on the sides (this is your handle for lifting the whole slab out later). Line the bottom with a layer of graham crackers, breaking them as needed to fill in any gaps.

The next steps will look familiar if you’ve ever made cookie dough before. Beat your butter and sugars together until they’re smooth, then mix in the eggs and vanilla. Add your dry ingredients until just combined, then fold in the chocolate chips and marshmallows. Scoop the dough over the graham cracker layer and press it down to even it out. And then, if you’d like, sprinkle the top with a few more marshmallows.

Bake until it’s golden brown, and go ahead and tent it with foil if the top is browning faster than the middle is baking through. The second these come out of the oven, press pieces of Hershey’s bar right into the top — the residual heat melts them into irresistible gooey morsels. Let the bars cool before lifting them out by the parchment and slicing into squares. Enjoy!
