How Do You Make Cauliflower Cheese?

My version borrows its bones from Jacques Pépin’s cauliflower gratin, nudged toward the classic British style — sharp cheddar, a proper béchamel, and cauliflower blanched just until it yields but still holds its shape. That béchamel is where the real magic happens; butter melted until it just stops foaming, flour whisked in and given a full minute to lose its raw edge, then milk poured in all at once and whisked like you mean it until it turns glossy and thick. Add the cream, a hit of dry mustard, and you’ve got a sauce that’s silky enough to earn its place under all that cheese.

Pour it over the cauliflower, blanket it in cheddar and parmesan, and let the oven do the rest — thirty minutes later you’ve got something bubbling, golden, and impossible to walk past without sneaking a bite straight from the corner of the dish. Comfort food doesn’t get much more honest than this.
