There’s something about quirky, old-fashioned recipes that always catches our attention, and Circus Salad is definitely one of them. This retro dessert is the kind of recipe that might have shown up at a church supper, family potluck, or holiday table decades ago. It’s colorful, sweet, and… just a little bit unexpected.


The name comes from one of the most nostalgic candies around: circus peanuts. Those bright orange marshmallow candies give this dessert its signature flavor and color, while orange Jello and crushed pineapple bring even more fruity sweetness to the mix. It’s a combination that sounds unusual at first, but somehow works.


Once everything is mixed together, Cool Whip makes the dessert light and creamy. The mixture gets spread into a baking dish and chilled until firm, so it can be sliced and served just like a classic Jello salad. For an extra bit of flare, you can top each piece with a whole circus peanut before serving.

If you grew up with Jello salads and fluffy desserts at family gatherings, this one may bring back some memories. Circus Salad
Ingredients
- ~30 circus peanut candies
- 1/4 cup boiling water
- 2 (3 oz) packages orange jello
- 2 (8 oz) cans crushed pineapple with juices
- 1 (8 oz) cool whip, thawed
- optional: additional circus peanuts for topping
Preparation
- Roughly chop the circus peanuts and place them in a large microwave safe bowl. Add ¼ cup boiling water and place a large plate over the top of the bowl. Microwave for 50 seconds, stir mixture, then microwave for 60 additional seconds. Stir mixture until smooth.
- In another large bowl, add ¾ cup boiling water and jello. Whisk until jello is fully dissolved, then stir in circus peanut mixture and pineapple with juices. Chill for 15 minutes.
- After chilling, gently fold in cool whip and transfer mixture into a 9x13-inch baking dish. Cover and chill until set, about 2 hours.
- Slice and top each slice with a whole circus peanut if desired.
