If you’re familiar with the classic cowboy cookies, then this recipe will look pretty familiar to you. We’ve got all the basic ingredients like butter, granulated sugar, brown sugar, and eggs for the base, then old fashioned oats and coconut flakes are mixed in for a little texture. Now, we deviate from the OG recipe and swap in sliced almonds and white chocolate chips.


Once the dough is all mixed together, you’ll want to pop it in the fridge to firm up for about an hour. When you’re ready to bake the cookies, preheat your oven and portion the dough onto your cookie sheet. If you’ve properly chilled the dough the cookies shouldn’t spread too much, but you’ll want to leave at least 2 inches between each dough portion.

Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup old-fashioned oats
- 1 cup sliced almonds
- 1/2 cup sweetened shredded coconut
- 1 ½ cup white chocolate chips
Preparation
- In a mixing bowl or the bowl of a stand mixer, beat the butter and both sugars together with an electric mixer until light and fluffy, about 3 minutes.
- Add eggs and vanilla and beat until well combined.
- Add flour, salt, baking powder, and baking soda, and mix until just combined.
- Stir in oats, almonds, and coconut. Add white chocolate chips and stir to incorporate.
- Chill dough at least 1 hour or up to 24.
- When ready to bake, preheat oven to 350°F and line a baking sheet with parchment paper.
- Scoop out in 1/4 cup portions onto prepared baking sheets, leaving 2 inches between each scoop.
- Bake until golden around the edges,13-15 minutes. Let cool 5 minutes on baking sheet before removing.
