There’s a rule my grandmother taught me for cobbler – salted butter in the bottom of the pan, no exceptions – and it’s served me well for every single fruit version I’ve ever made. But this one breaks the mold a little, because why pick just one berry when you can have three?

Sometimes you really can have it all. Strawberries, blackberries, raspberries… or really whatever combination is calling to you at the market (or from your garden!) this week. This is the cobbler I make in the height of berry season when I can’t bring myself to choose just one.

What Ingredients Do You Need for Triple Berry Cobbler?

There’s nothing fancy here, just pantry staples and beautiful berries:

  • Salted butter. A must.
  • Self-rising flour. (No self-rising on hand? No problem! I’ll show you the swap.)
  • Sugar, divided between the batter and the fruit.
  • Whole milk.
  • Vanilla extract.
  • 3 cups of berries. Strawberries, blackberries, raspberries, or your own favorite mix.
  • And vanilla ice cream, if you’re doing this right. (You’re doing this right.)

This isn’t like most cobblers you’ve seen… this is my favorite method and it gets made a little backwards. First, you melt your butter right in the baking dish – just pop it in the oven while it preheats and let it do the work for you.

While that’s happening, whisk together your flour and most of the sugar, then whisk in the milk and vanilla until you’ve got a smooth, pourable batter.

Once the butter’s melted, pour that batter right over the top. Don’t stir it in; just pour it on over.

Toss your berries with the last bit of sugar and spoon them over the batter. Again, no stirring! This is the part where the magic happens: as it bakes, the batter rises up through the fruit, and you end up with a golden, cakey top and a bubbly, syrupy berry layer underneath.

Bake until the top is deep golden brown, about 50 to 60 minutes, and try to wait until it’s cooled just enough to serve without burning your tongue. (Easier said than done, I know.)

Serve warm, with a scoop of vanilla ice cream melting into every bite. Enjoy!

Don’t have self rising flour?

Easy. Make your own with 2 cups flour, 1 teaspoon salt, and 3 teaspoons baking powder.
