Mexican Milk Jello

Ingredients
- 1 (6 oz) box strawberry jello
- 1 cup boiling water
- 1/2 cold water
- 1 (12oz) can chilled evaporated milk
Preparation
- Place evaporated milk in the freezer for a minimum of 1 hour before starting recipe.
- In a large bowl (ideally with a pour spout), combine jello powder and boiling water and whisk until fully dissolved. Add cold water and mix to combine, then set aside until mixture reaches room temperature.
- Pour the chilled evaporated milk into a large mixing bowl and use an electric mixer to beat until soft peaks form. Milk will double in volume!
- While continuously mixing, slowly pour jello mixture into the milk until fully combined.
- Immediately pour mixture into a 9x13-inch glass dish or individual serving bowl. Refrigerate for 1-2 hours, or until fully set.
- Serve with fresh fruit and whipped cream if desired.
