Pantry Cake
Ingredients
- 1 cup old-fashioned oats
- 1/2 cup butter, cubed
- 1 3/4 cup boiling water
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 3/4 cup flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 tablespoons cocoa powder
- 1/2 teaspoon salt
- 1 ½ cups chocolate chips, divided
- 1/2 cup brown sugar, for topping
Preparation
- Preheat oven to 350 and grease a 9x13-inch baking dish.
- Add oatmeal and cubed butter to a large mixing bowl and pour boiling water over the top. Mix and let sit for 5 minutes.
- Add brown sugar, granulated sugar, eggs, and vanilla. Mix until well combined.
- In a small bowl, sift together flour, baking soda, cinnamon, cocoa powder, and salt. Slowly mix dry ingredients to the wet ingredients, then fold in 3/4 cup of the chocolate chips.
- Transfer batter to the prepared baking dish and sprinkle remaining chocolate chips and 1/2 cup brown sugar over the top.
- Bake for 30 minutes or until an inserted toothpick comes out clean.
- Serve hot or room temperature and top with whipped cream.
