The Jennifer Aniston Salad
Diet: Vegetarian
Ingredients
- 1 cup uncooked quinoa
- 1 (15 oz) can chickpeas, drained
- 1 cup english cucumber, chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh mint, chopped
- 1/3 cup red onion, diced
- 1/2 cup roasted pistachios, chopped
- Juice of 2 lemons
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon Black pepper
- salt, to taste
- 1/2 cup feta cheese crumbles
Preparation
- Cook quinoa according to package directions, then cool to room temperature.
- In a large bowl, add all ingredients and toss to evenly coat.
- Chill salad for 30 minutes before serving for best flavor.
