Hummingbird Cake is a Southern classic that has been showing up at family gatherings, church suppers, and holiday tables for generations. This recipe from Southern Living is a favorite for good reason. It’s a layered cake with plenty of flavor, a soft texture, and a generous helping of cream cheese frosting. It’s the kind of dessert that feels right at home on a special occasion, but it’s also a lovely way to make an ordinary Sunday dinner feel a little more special.

What makes Hummingbird Cake stand out is the combination of fruit, warm spices, and toasted pecans. The banana and pineapple keep the cake moist, while cinnamon and allspice add a little warmth to every bite. Toasted pecans bring a nice crunch that balances out the soft cake layers. The flavors all work together without one ingredient overpowering the rest, making this a cake that’s easy to come back to for another slice.

Of course, a Hummingbird Cake wouldn’t be complete without its cream cheese frosting. The rich, tangy frosting pairs perfectly with the sweet fruit and spiced cake, and there’s plenty to cover the layers and give the whole thing a beautiful finish. A sprinkle of toasted pecans over the top adds a little extra crunch and makes the cake look right at home on a dessert table. It’s a simple finishing touch that brings everything together.

This cake takes a little more time than a simple sheet cake, but the steps are straightforward and the result is well worth it. Bake the layers until they’re just cooked through, then let them cool completely before adding the frosting. You can even make the cake layers ahead of time to make assembly easier on the day you plan to serve it. Whether you’re making it for a holiday, a birthday, or just because you’re in the mood for a tried-and-true Southern dessert, this Hummingbird Cake is sure to be a hit!

- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon allspice

- 2 cups toasted pecans, roughly chopped
Cream Cheese Frosting
- 2 (8 oz) packages cream cheese, room temperature
- 1/2 cup unsalted butter, room temperature
- 4 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
Preparation
- Preheat oven to 350 degrees F and grease two 9-inch round cake pans.
- In a large bowl, combine eggs and oil and mix until smooth. Add the sugar, brown sugar, vanilla, mashed banana and pineapple with juices. Mix until well combined.
