The salad starts with making a quick dressing. Olive oil, vinaigrette, and dried oregano are whisked together. You can use a variety of dried herbs, but oregano gives a subtle but satisfying earthy contrast and doesn’t overwhelm the tomato in the same way like rosemary would.

Then, the tomato wedges and thin onion slices are mixed with the dressing. For a more complex flavor, you can let the salad marinate in the fridge for an hour or so before serving.

Ingredients
- 3 tablespoons olive oil
- 2 tablespoons red or white wine vinegar
- 1 teaspoon dried oregano
- 4 medium tomatoes, sliced into wedges
- 1 medium sweet onion, thinly sliced
- Kosher salt and freshly cracked black pepper, to taste
Preparation
- In a large bowl whisk together olive oil, vinegar, oregano, salt, and pepper. Add in the tomatoes and onions, gently tossing to combine. Season again with salt and pepper (if needed), serve, and enjoy!
