Celery seems forgotten. While it is a base for aromatic flavor in a mirepoix, it seldom takes center stage—that is, until now. With this recipe for Sesame Celery Salad, the crispy snack becomes a meal’s perfect companion. Simple prep leads to a salad with an intriguing flavor profile, while preserving the crisp and refreshing texture of celery.

After the celery is cleaned and cut, bring the celery to a boil, followed by an icy water bath. This will reduce the intense raw flavor of the celery but also preserve its crispiness. 

As the celery is cooking, the dressing can be assembled. Soy sauce, light brown sugar, sesame oil, and garlic are all you need.

Dress the cooled-down celery with the sauce, refrigerate, and then serve. Chilling the celery with the dressing allows the flavors to penetrate into the celery and create a melded and cohesive flavor.

A garnishing of sesame seeds drives home the nutty elements of the sesame oil in the dressing, making for a perfect compliment and continuation of the umami-rich ingredients.

Ingredients
  • 1 head celery (about 8 stalks), cut into 1-inch diagonal slices
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon packed light brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 2 teaspoons sesame seeds (for garnish)
Preparation
  1. Prep a bowl with cold water and ice cubes, set aside.
  2. Put the prepared celery into a saucepan, adding cold water to just cover the celery. Bring to a boil and then drain immediately, placing into a bowl of ice water to cool down immediately.
  3. In a large bowl whisk soy sauce, light brown sugar, sesame oil, and minced garlic.
  4. When the celery is completely cooled, drain the celery and mix it with the dressing, tossing to combine.
  5. Wrap the bowl with plastic wrap and refrigerate for 1 hour. Garnish with sesame seeds, serve, and enjoy.
