Picadilly's Carrot Souffle

Ingredients
- 3 pounds carrots, peeled and roughly chopped
- 1 1/3 cups granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon vanilla
- 6 eggs
- 1 cup butter, room temperature
- 1/4 cup all-purpose flour
- Optional: powdered sugar, for dusting
Preparation
- Preheat the oven to 350 degrees and lightly grease a 9x13 baking dish.
- In a large pot, steam carrots for 15 minutes or until fork tender.
- Add steamed carrots to a large blender along with the sugar, baking powder, salt, vanilla, eggs, and butter. Blend for 1-2 minutes until smooth.
- Add flour and blend for 10-20 seconds until fully incorporated.
- Transfer to the prepared baking dish and bake for 45-50 minutes or until golden.
- Dust top with powdered sugar if desired and serve hot.
