Red Onion Party Dip

Ingredients
- 2 large red onions
- 2 tablespoons olive oil
- 2 teaspoons salt
- 2 teaspoons granulated sugar
- 1 cup sour cream
- ⅓ cup mayo
- 1 garlic clove, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon black pepper
- Optional: 1 tablespoon minced chives
- chips or crackers, for serving
Preparation
- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Slice onions in thin rounds, keeping rings intact. Place rounds on the prepared baking sheet in a single layer. Drizzle olive oil over onions and season with salt and sugar.
- Bake onions for 30-35 minutes or until softened and starting to turn golden.
- Allow onions to cool for 15 minutes, then roughly chop and add to a medium-sized bowl.
- Add remaining ingredients in with the chopped onion and mix until well combined.
- Transfer to a serving dish if desired and chill for 30 minutes before serving.
- Serve with potato chips, pretzels, or crackers.
