The slightly sweet and tangy flavor or pimento cheese brings me back to my childhood having pimento cheese sandwiches for lunch or dipping crackers into this cheese as a dip. It’s one of those foods that’s always a hit wherever you serve it. Combine this with the familiar flavor of cheeseburgers and you’ve got a recipe for yumminess. These Pimento Cheeseburger Hand Pies bring together two tasty comfort foods in handheld pie format for a flavor explosion in each bite.

Brown your ground beef with a little onion and then let it cool while you measure out the other ingredients and pre-heat the oven.

Cut rectangles into the pie dough sheets about 3 1/2 by 4 1/2 inches. I used premade pie dough sheets for this recipe and the store I went to didn’t have the square sheets. So I simply rolled it out to be closer to a square shape and cut my rectangles from that. You can use crescent roll sheets or make your dough from scratch if you prefer.

Place some American cheese in the center of each rectangle followed by the ground beef filling (the burger part of this equation), and then top with some delicious pimento cheese. Place your second piece of dough on top and press with the back of a fork to seal the two layers together.

When these come out of the oven they are golden brown on top and filled with the flavors of a pimento cheese sandwich and a cheeseburger. These are sure to go quickly at any table!

Ingredients
  • 1 tablespoon olive oil
  • 1/2 white onion, finely diced
  • 1/2 lb ground beef 93% lean
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 3 sheets pie or crescent roll dough
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon yellow or dijon mustard
  • 2 tablespoons ketchup
  • 3 tablespoons dill relish
  • 6 slices American cheese, cut into halves
  • 1/4 cup milk
  • 1 cup pimento cheese
Preparation
  1. Add olive oil to skillet and heat over medium. Add onion and cook for 1 minute. Add beef and cook for 5-7 minutes, breaking up finely as it cooks. Add garlic and cook 1 minute more. Season with salt and pepper to taste and remove from heat. Set aside.
  2. Flour flat work surface. Roll out first sheet of dough and cut into rectangles 3 ½” x 4 ½” .
  3. Preheat oven to 375˚F. To cooled beef add Worcestershire sauce, mustard, ketchup, relish. With finger run a bit of milk along the edge of bottom crust. Place some American cheese on half the rectangles. Top with 2 tablespoons beef filling then add a tablespoon of pimento cheese.
  4. Place empty dough rectangles on top of each one and press with the tines of a fork to seal. Trim excess in straight line. Repeat for second sheet of dough, ending up with 8 hand pies in total.
  5. Place pies on lined baking sheet and brush tops with a bit of milk. Bake for 15 minutes or until golden brown. Serve with dipping sauce of your choice.
