New Jersey Lemon Crumb Cake
Ingredients
- 2/3 cup granulated sugar
- Zest of 1 lemon
- 1/3 cup unsalted butter, melted
- 1 egg
- 2/3 cup buttermilk
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract, optional
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup plain Greek yogurt
Crumb Topping
- 2/3 cup all-purpose flour
- 2/3 cup granulated sugar
- 6 tablespoons unsalted butter, softened
Icing
- 2 tablespoons fresh lemon juice
- 1/2 cup powdered sugar
Preparation
- Preheat oven to 375 degrees F and grease a 9x9-inch baking dish.
- For the cake: In a large mixing bowl, combine sugar and lemon zest and mix until well combined. Add the butter, buttermilk, vanilla extract, almond extract, and egg and mix until light and airy. Add the flour, baking powder, and salt and mix until just combined, then fold in the greek yogurt. Transfer batter to the prepared baking dish.
