A flavorful blend of spices adds big flavor to this delectable Millionaire Southwest Chicken. It’s simple and quick to put together, using popular pantry staples to create an easy, super satisfying meal for those who enjoy a bit of winter warmth with their chicken. It may not be the prettiest looking dinner that I’ve ever created, but I’m hard pressed to find a dish with a tastier combination of chicken, creamy sauce, and spices!

This straightforward Millionaire Southwest Chicken recipe combines rich and luxurious cream cheese with the sunny brightness of fresh green chilies mixed with the earthiness of garlic, onion, paprika, and cumin. A pop of lime juice adds a welcome touch of tang, while the tomato base keeps the flavor combination grounded. It’s a spicy, warming sauce that brings out the juiciness of the grilled chicken.

The great thing about using this Millionaire Southwest Chicken is its versatility. Our variation uses peas and corn to fill it out with a veg component, although you can head in whatever direction you like. I’ve found that broccoli, beans, and even yellow squash also work well, because they soak up the spice and flavor. It goes without saying that some form of potatoes are a must, with air fried spuds creating a nice mix of crispiness and creaminess!

Millionaire Southwest Chicken makes a great mid-week meal when you’ve got plenty of ‘stuff,’ but want to do things a little bit differently. It can be cooked for a large family meal, or suit a quick dinner and make-ahead meals for when you’re strapped for time later down the track. You can put this cream cheese and chicken dish together in less than an hour from start to finish, delivering a dinner that’s full of flavor, freshness, and fun!

Ingredients
  • 3 x chicken breast filets, trimmed
  • 1 tablespoon olive oil, for cooking
  • 1 tablespoon unsalted butter
  • 2 tablespoons minced garlic
  • 1/4 cup chicken stock
  • 2 tablespoons lime juice
  • 4 green chilies, deseeded and finely chopped
  • 1 x 14 oz can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon coarse onion flakes
  • 1 teaspoon sweet paprika
  • 1 teaspoon cumin powder
  • 8 oz cream cheese, softened
  • 1/2 cup peas and corn
  • Kosher salt and black pepper, to taste
Preparation
  1. Slice the chicken in half lengthwise to make 6 approximately equal-sized pieces. Sprinkle both sides of the chicken with salt and pepper.
  2. Heat the oil, butter, and garlic in a skillet or large fry pan over medium-high heat. Add the chicken, sear, and then cook for 5 minutes on each side. Transfer chicken to a plate and set aside.
  3. Reduce the heat to medium. Add the chicken broth, lime juice, chillies, and herbs, and stir thoroughly. Cook for 2-3 minutes.
  4. Return the chicken back to the pan, then add the tomatoes and stir together to combine. Cook for 5 minutes, then lower the temperature.
  5. Stir in the cream cheese and then add the peas and corn. Simmer the southwest chicken mixture for 10-15 minutes, stirring occasionally.
  6. Remove the Millionaire Southwest Chicken from the heat. Season with salt & pepper, then serve immediately with a side of your choice, such as air-fried potatoes or mash.
