If you’re a fan of coconut desserts, these Louisiana Crunch Bars are an easy treat to add to your baking list. They have a simple brown sugar batter and plenty of coconut baked right into the top and bottom, giving the bars a lightly toasted finish. The combo of soft cake and crunchy coconut is just divine!


The batter comes together quickly with melted butter, brown sugar, eggs, and a little vanilla and coconut extract. Once the flour and baking powder are mixed in, half of the coconut goes into the bottom of the baking dish before the batter is spooned over it. The rest gets sprinkled on top.


As the bars bake, the coconut toasts around the edges and across the top, while the inside stays soft and chewy. The brown sugar adds a little extra richness without making the bars overly sweet, and the coconut flavor comes through in every bite.

Louisiana Crunch Cake
Ingredients
- 1 cup flaked coconut, divided
- 3/4 cup butter, melted
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 1/4 cups all-purpose flour
- ½ teaspoon baking powder
Preparation
- Preheat oven to 350 degrees F and line an 8x8-inch baking dish with lightly greased parchment paper.
- Sprinkle half the coconut flakes across the bottom of the dish in an even layer.
- In a large bowl, combine the melted better, brown sugar, eggs, vanilla extract, and coconut extract. Mix until well combined.
- Add flour and baking soda to the wet ingredients and mix until just combined. Gently spoon batter into the baking dish, over the coconut.
- Sprinkle remaining coconut over the batter.
- Bake for 25-30 minutes or until lightly toasted and golden.
- Allow bars to cool before slicing.
