How Do You Make Ham & Cheese Hand Pies?

Preheat your oven according to the biscuit package and line a sheet tray with parchment or a silicone mat. Then make the filling: stir together the cream cheese, Swiss, chopped ham, garlic powder, and whole grain mustard. Make sure the cream cheese is at room temperature first. Cold cream cheese won’t blend smoothly, and you’ll end up with lumps instead of a creamy, spreadable filling.

Next, roll out the biscuits. Dust your counter with just a little flour and roll each biscuit into a thin circle, about 6 inches across and ⅛ inch thick. Go easy on the flour, since too much will keep the edges from sealing. Rolling the dough this thin is what turns a fluffy biscuit into a flaky pastry crust, and it lets the dough bake all the way through around the filling.

Spoon the filling onto one half of each circle, leaving a little border around the edge. Fold the dough over and crimp the edges with a fork, just like an empanada. Don’t be tempted to overfill. A good seal is what keeps all that melty cheese inside the pie instead of on your baking sheet.

Finally, whisk the egg with a pinch of salt and brush it over each pie. The salt thins out the egg so it spreads more evenly, which gives you that glossy, golden finish. Bake for 12 to 15 minutes, until they’re puffed and deeply browned.
