Tortillas are folded fan-like into a casserole dish and filled with ham and spinach before being coated in a savory egg milk soak and topped with a hefty dose of cheese.


Whether it be breakfast or brunch, the same old toast, pancakes, or omelets can sound a bit boring, but this Crinkle Tortilla Casserole is full of ingredients and has an amazing crispy but tender contrast in texture.
Flour tortillas are the most optimal for this recipe, as they fold and bend easily without breaking.

Once the tortillas are folded into the casserole dish, the valleys of the folded tortillas are filled with cooked spinach and slices of ham.

Next, a soak of eggs and milk covers the entirety of the casserole, seasoning the tortillas but also protecting them from drying out in the oven.

Ingredients
- 14 to 16 flour tortillas
- 10 to 12 thin ham slices
- 1 cup cooked spinach, drained
- 2 large eggs, lightly beaten
- 1 cup whole milk
- 1 cup shredded mozzarella cheese
- Kosher salt and freshly cracked black pepper, to taste
Preparation
- Preheat oven to 350°F and grease an 8x8-inch casserole with baking spray.
- Fold the tortillas in a zig-zag accordion-like shape, and place them vertically into the prepared baking dish, pressing them tightly up against one another.
- Place the ham and spinach into the valleys of the crinkled tortillas.
- In a bowl whisk eggs and milk together, seasoning with salt and pepper.
- Pour the egg-milk mixture over the tortillas, trying to distribute the liquid evenly throughout the casserole.
- Top the casserole with the cheese and bake uncovered in the oven for 18 to 20 minutes or until it is bubbling and the cheese looks golden brown. Serve warm and enjoy!
