If you’ve ever grabbed a slice at a pizza shop in Sweden, you may have noticed a simple little side dish quietly sitting next to your plate. It’s crisp, tangy, lightly sweet, and a little herby. That classic side is Swedish Pizza Salad. While it may not get the same attention as the pizza itself, it has a loyal following for a reason. This crunchy cabbage salad is the perfect fresh accompaniment between bites of cheesy pizza.

This salad is all about simple ingredients coming together in a delicious way. Shredded green cabbage forms the base, and it gets a quick sprinkle of salt to soften it just enough while still keeping that crunch. From there, a simple dressing of olive oil, white vinegar, sugar, oregano, basil, black pepper, and crushed red pepper flakes brings everything to life. It’s savory, a little sweet, a little tangy, and just spicy enough to keep things interesting.

After the cabbage has had a few minutes to soften with salt, the dressing is whisked together and poured right over the top. A good toss ensures every ribbon of cabbage is coated in that bold, punchy flavor. While you could serve it right away, it’s even after it chills in the fridge for about an hour, allowing the flavors to meld and deepen.

What you’re left with is a refreshing, crunchy side dish that somehow manages to balance out even the most indulgent pizza night. It’s bright and unexpectedly addictive—one of those recipes you find yourself making again just to have in the fridge. Whether you’re serving it alongside homemade pizza or ordering your favorite takeout, Swedish Pizza Salad is the perfect finishing touch to your dinner.
