If there’s a better savory combo than tomatoes and cheese I’ve yet to hear about it! Everything from pizza to lasagna uses this classic pairing because it works so well. In these Cheesy Baked Tomatoes you get a mix of flavors that makes it the perfect side dish. Or serve it on some toasted bread for a tasty lunch!

The ingredients you need for this recipe are few, but the flavors come together beautifully. I like to use a veggie peeler to shave off some fresh Parmesan and of course any chance to use fresh mozzarella I’m all in for. But, the brilliant thing about this recipe is that you can make it any number of ways.

While the Caprese salad flavors are amazing together, you could switch it up with some pepper jack and cumin or some cheddar and thyme. There are so many combinations that would work!

The main flavorings (as the recipe is written) come from garlic powder and fresh basil. Sometimes I like to add a bit of Montreal steak seasoning just before serving, too. But, there are any number of spices that will work well here so feel free to mix and match as your taste buds guide you towards the best flavor.

For these baked tomatoes we don’t want them to disintegrate, so for Beefsteak tomatoes I cut each one into 4 equal slices. This means they’re pretty thick so they can stand up to the heat of the oven.

Once you’ve baked them most of the way, pop these tomatoes under the broiler for a few minutes to get that golden brown top and to fully melt the cheeses.

I like to slice up some ciabatta bread and toast it on a baking sheet with some olive oil then serve these tomatoes on top. But, if you’re going gluten-free or just want fewer carbs you can serve these tomatoes as a side with no bread. They make a really great meal with some baked chicken breasts or some meatloaf.

Ingredients
  • 4 large Roma or 4 regular Beefsteak tomatoes, thickly sliced
  • salt and pepper to taste
  • ½ teaspoon garlic powder
  • 1 cup freshly shredded Parmesan cheese
  • 1 cup torn fresh mozzarella cheese (about 5 oz)
  • 1 tablespoon olive oil
  • ½ cup chopped fresh basil
  • optional: toasted bread for serving
Preparation
  1. Preheat oven to 400˚F. Place tomato slices on lined baking sheet. Sprinkle with salt and pepper and a little garlic powder to each slice. Add cheeses to tomatoes then drizzle with olive oil. Sprinkle basil on top.
  2. Bake for 8-10 minutes then turn on broiler to low. Place pan directly under broiler for 2-3 minutes to brown the cheese.
  3. Serve with crostini or as a side dish to meat or pasta.
