Making Mealtime Meaningful: Discover how we're giving back with the 12T Cares program →

I’m all about easy dessert recipes. Sure, I love a good from-scratch cheesecake or pie with homemade crust on occasion, but I don’t often have the time to make elaborate desserts – especially when it’s mainly for me and my sweet tooth! That’s why I love finding simple recipes that I can doctor up to fit my mood. And what’s simpler than a box brownie mix?

While just the brownies are good on their own, I always have fun finding new ways to build upon the brownie base and make unique and tasty treats. Here are a few of my favorite brownie desserts that start with a simple box mix. Go ahead and find your new go-to brownie recipe on the list below!

Ice Cream Brownie Cake

A slice of cake served a la mode is great, but why not bring those two worlds together into one beautiful combination of deliciousness. When food is served in layers, we know we’re in for a treat. Everyone’s familiar with icebox cakes and even ice cream cakes, and if this ice cream brownie cake is something you’ve made before, then you know just how good it is. What we’re serving up here is layer upon sweet layer of goodness. This is a cake meant for a celebration or any special occasion, and when a plain ol’ cake simply won’t do. Get the recipe here!

Salted Caramel Hazelnut Brownies

Chocolate brownie caramel sauce and nuts

These amazing, salted caramel brownie bars look elaborate and impressive, but really, all you have do is spruce up a box mix of chocolate fudge brownies (or make your own from scratch) and call it a day! Using box mix and store-bought caramel candies makes this process way easier, and then you can spend more time sharing, or hoarding, and devouring these brownie bars! Get the recipe here!

French Silk Pie Brownies

This recipe is made easy by using boxed brownie mix, but don’t let that fool you into thinking this is a boring recipe. Far from it. While the brownies are cooling, you’ll make the topping. This rich French silk frosting has dark chocolate, butter, cream cheese, powdered sugar, and whipped cream. Top with more whipped cream and some chocolate shavings, and you’ll have a dessert that will impress friends and family! That is if you’re willing to share. Get the recipe here!

Buckeye Brownie Cookies

If you’re a fan of peanut butter and chocolate, this is the dessert for you! Even people who claim not to like this classic duo end up loving these cookies. This recipe is made easy by using a boxed brownie mix as a base. By adding just a few ingredients to the mix, you’ll get a cookie with a perfectly dense yet almost creamy texture. Add on a dollop of 2-ingredient peanut butter fudge and some melted chocolate chips, and we’re in business! Get the recipe here!

Milk & Cookies Cheesecake Brownies

Oh boy… this dessert is like some sort of heavenly trifecta. It combines three classic baked goods – chocolate chip cookies, cheesecake, AND brownies – in one amazing confection. And we must say, while those three are certainly great on their own, they might be even better when they’re together. Add a cold glass of milk on the side and it’s hard to imagine anything better. Snickers Brownie Ice Cream Cake

This Snickers Brownie Ice Cream Cake might sound daunting, but it’s really super easy and much more amazing than anything store-bought! Grab some brownie mix at the store, some chocolate and caramel sauce, and whip up a scrumptious ice cream cake – everyone will love it! Get the recipe here!
