Texas Beaver Nuggets
The best snack in the south!

If you’ve ever taken a road trip through Texas, chances are you’ve stopped at Buc-ee’s. And if you’ve tried their famous Beaver Nuggets, you know exactly why folks load up by the bagful. Those sweet and crunchy little puffs make for the ideal car snack and we cannot get enough. Sadly, there’s no Buc-ee’s close to us, so we had to come up with a homemade version, and I’ve gotta say, this recipe comes pretty dang close. Give it a try yourself and let us know if we got it right!



The base of this recipe is corn puff cereal or puffed corn (you’ll find that in the snack aisle). Start things out with a simple stovetop syrup with a touch of maple flavor. Pour it over the cereal and toss until every piece is coated in that sticky goodness. Spread the mixture out on a parchment-lined baking sheet, and then it’s off to the oven. Stirring every 15 minutes helps the nuggets bake evenly and keeps them from clumping together (although we won’t judge if you prefer your nuggets in big caramel clusters!).


Once they’re cooled and broken into pieces, these nuggets are ready for snacking, gifting, or hoarding (we recommend the latter). They keep well in an airtight container, but we’re not sure they’ll last long enough for that to matter. Whether you’re a Buc-ee’s devotee or just in it for the caramel crunch, this homemade version is sure to hit the spot. Just one bite, and you’ll be hooked.


Texas Beaver Nuggets
Allergens: Corn
Ingredients
- 8 cups corn puff cereal
- 1 cup brown sugar, packed
- 1 cup unsalted butter
- 3/4 cup light corn syrup
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 cup maple syrup
Preparation
- Preheat oven to 275 degrees F and line a large baking sheet with parchment paper, then set aside.
- Add cereal to a large mixing bowl, then set aside.
- In a medium-sized saucepan, combine brown sugar, butter, corn syrup, and salt. Heat mixture over medium heat until it comes to a boil. Reduce heat to low and cook for another 4-5 minutes.
- Remove mixture from heat and mix in vanilla, maple syrup, and baking soda. Mixture will foam slightly and lighten in color.
- Pour mixture over the cereal and mix with a greased spatula until evenly coated.
- Transfer nuggets to the prepared baking sheet and spread into an even layer.
- Bake for 45 minutes, stirring every 15 minutes or so.
- Allow treats to fully cool then break into pieces and enjoy. Store in an airtight container.
