An inspired dessert I learned from my mom. A light and refreshing summer take on the famous caramel apple sundae.

Maybe it’s just a Midwest thing, but my team here in Seattle has never heard of taffy apple salad before. It’s shocking to me. It’s this delicious and easy caramel apple dessert sundae that you need this summer. We need more apple desserts in the summer. There are so many apples EVERYWHERE and it’s not fall-y enough for apple pie or apple crisp. Another recipe my mom would make for my sister and me who absolutely just go bonkers for it. I never knew how simple this recipe was. There’s even enough sweetness in the apples, cool whip, pineapple, honey roasted peanut, and caramel sauce, that no extra sugar is necessary. What an exciting thing for me in my 30s. Low sugar desserts and we’re not even using any sugar-free products!

Dessert was always on the menu at my mom’s house growing up. From coffee cakes to a bowl of ice cream with peanuts sprinkled on top, dessert was our 4th meal of the day. My mom loved to create fun and exciting recipes for us. She made this one day and my sister and I went crazy for it. I’m not a huge caramel apple guy. All of that heavy caramel sticking to your teeth, no thanks. This recipe uses store-bought caramel sauce as a light creamy luxurious topping vs. the tacky chewy stuff. Everything you love about a caramel apple sundae, chopped up and eaten with a spoon. You and your family are gonna love this one.

Cool whip is such a versatile ingredient and I love that we’re still using it. It’s light, has minimal flavor, and is easy to use on top of a pie or mixed into an Oreo trifle. What’s your favorite use for Cool whip? Did you know that Cool Whip is a stabilized whipped cream? Heavy cream whisked into whipped cream will form a similar fluffy consistency, but will deflate after a day. Cool whip will stay fluffy because of the gums that make it stable. This recipe keeps for a week and definitely gets better as it sits in the fridge.

Ingredients:
  • 8 oz. Cool Whip
  • 20 oz. crushed pineapple, drained
  • 1 cup honey roasted peanuts, crushed
  • 3 granny smith apples, diced
  • 1 tablespoons apple cider vinegar
  • Caramel sauce for drizzling
Directions:
  1. In a bowl, fold together all ingredients except caramel.
  2. Place in a 9 x 9 tray and drizzle with caramel sauce. Chill for two hours.
  3. Apples!
