An old-school Southern delicacy you’ve only just heard about. Combining the sweet and savory flavors in one casserole that gets served with your favorite meat entrees, especially ham. Pineapple cheese is exactly what you think it is. Combine your canned pineapple tidbits along with sharp cheddar cheese, sugar, cream cheese, and diced pimento peppers before topping with buttery Ritz cracker crumbs to create a masterful sweet and salty tropical bite. Serve this alongside your holiday ham or backyard BBQ potluck. A twist on the classic casserole that will have you going back for seconds.

This recipe has had to come from the same cookbook that gave us the roasted sweet potatoes with marshmallows and brown sugar. It’s not something you would necessarily think of serving with your roasted meats, but it does provide a side dish that compliments the salty flavors of whatever you’re serving it with.

Traditional pineapple cheese casserole is made with only sugar, pineapple, Ritz, and cheese. As a more savory lover, I decided to elevate the flavors with ingredient pairings that will amp up the savories. Cream cheese is a great casserole addition for its creamy properties without overpowering flavor. Mix your cream cheese with the cheddar and pineapple before baking to add a custard-like component. Pimentos are a type of red pepper that once roasted give off a very sweet and sour flavor that lends itself well to a dish like this. Considering this is a Southern recipe, I figured combining these roasted peppers with cheddar cheese will give off that pimento cheese-like flavor. I think if anything you add to your pineapple casserole it should be these pimentos. A total compliment to the recipe.

For filling:
  • 1 - 28 oz. can crushed pineapple chunks, drained
  • 1 - 4 oz. jar diced pimentos
  • 2/3 cup sugar
  • 1/2 cup all purpose flour
  • 8 oz. cream cheese, softened
  • 1/4 cup reserved pineapple juice
  • 2 cups sharp cheddar cheese, grated
For topping:
  • 1/2 cup Ritz crackers, crushed
  • 1/2 cup panko breadcrumb, crushed
  • 1/4 cup unsalted butter, melted
Preparation
  1. Preheat a 350° F oven and prepare a 9x13 tray with softened cream cheese.
  2. In a small bowl mix together crackers, breadcrumb, and melted butter. Set aside. Note - Season with salt & pepper. (optional)
  3. In a bowl, mix together the pineapple, pimentos, sugar, and flour. Pour the mix in the cream cheesed tray.
  4. Sprinkle cheese over the pineapple and top with prepared breadcrumb.
  5. Bake for 30 - 35 minutes until the cheese is bubbly and the cracker topping is a golden brown. Enjoy!
