Sometimes with a “dump and go” crockpot recipe, you give up something in flavor for the sake of convenience. You know, the pasta might be a little mushy, the rice gets overcooked, but it’s okay because dinner took you five minutes to prep. But not here. With these Swamp Potatoes, it’ll still only take you five minutes of prep, but the slow cooking is what makes it taste amazing and all the ingredients involved benefit from it. What Ingredients Do You Need for Slow Cooker Swamp Potatoes?

It’s not a long list. You’ll need:

  • Potatoes. The sweetness of Yukon Golds works so well here.
  • An onion.
  • Some olive oil. And a stick of butter.
  • A pound of smoked sausage, any kind.
  • Green beans.
  • A packet of onion soup mix.
  • Cajun seasoning, garlic powder, and some salt and pepper.

How do You Make Slow Cooker Swamp Potatoes?

This is about as foolproof as recipes get. You can’t overcook it, you don’t need any special skills, you just need to chop a few things and stir them together. (Well, and push a button.)

You’ll want the potatoes in chunks about an inch and a half and your green beans in two-inch pieces. (I also like to remove the ends, but up to you.) Get those in a slow cooker along with a chopped onion and some sliced sausage. Kielbasa works wonderfully here but any smoked sausage will worked.

Add some salt and pepper, the garlic powder, Cajun seasoning, and the packet of onion soup mix and give the top a little drizzle of olive oil. Stir everything together — the oil is really just there to help coat everything in the spices and help it not stick to the slow cooker insert.

Then, put a whole stick of butter on the top, close it up, and set it to cook. I know having both butter and oil seems odd, but here’s why it works: the butter melts down as this heats up and it combines with the seasonings and the onion soup packet to form a delicious sauce. Don’t skimp on it!

The longer this goes, the more flavorful it seems to get. It’s a great recipe to throw in the crockpot when you’ve got a full day but want a delicious dinner ready at the end of it.
