We’re always on the hunt for the perfect potluck salads, and the recipe we have for you today certainly falls into that category! This Shoepeg Salad is simple to prepare, bursting with color, and absolutely delicious. Sweet shoepeg corn combines with crisp cucumber, fresh tomato, and crunchy red bell pepper that’s then all tied together with an easy homemade dressing. It’s the kind of dish that will have everyone coming back for seconds… or even thirds!

One of the things we love most about this salad is how easy it is to throw together. With just a handful of pantry staples and a few fresh veggies, you’ve got a gorgeous dish that comes together in no time. The dressing is made with just three ingredients, but brings all the right flavors to the mix. A little mayo for richness, vinegar for tangy, and then a spoonful for sugar to sweeten things up. It strikes that perfect balance of creamy and zippy.

Don’t let the simplicity fool you—this salad is packed with flavor and texture. The shoepeg corn gives a naturally sweet pop in every bite, while the cucumber adds a cool crunch and the green onions bring just enough bite to keep things interesting. Once the salad is assembled, pop it in the fridge for about an hour to let those flavors meld together. Whether you’re planning a picnic, a potluck, or just need a refreshing side dish, this Shoepeg Corn Salad is up for the task.
