Gravy is my all time favorite condiment, yet for the longest time I couldn’t (and wouldn’t) make it at all. Sure, I could add boiling water to something from a packet, give it a stir and call it gravy, but I couldn’t rustle up the perfect accompaniment for meat, chicken, or many fast foods on my own.

Since learning how to make it, this Easy Chicken Gravy recipe has become my absolute go to for dinner times. A good stovetop chicken gravy that comes to hand in less than ten minutes is perfect for family dinners or dinners with guests. We have it with everything except fried chicken (I’m all about the dipping sauces). It stands out for how quick it comes together, and how tasty it is. I’m not a fan of making gravy from drippings – I think the taste is wildly overrated, and they can cause mistakes if you aren’t concentrating.

Easy chicken gravy has few ingredients, and the recipe is straight forward. The emphasis is on keeping the ingredients moving while each element is added, and then folded in. You need unsalted butter, salt and pepper, a good chicken stock, garden herbs, and plain flour to thicken. Once you’ve done it a couple of times, you can then begin adding items, and/or playing with the gravy’s thickness and consistency.

The green onions provide a great contrast with the chicken stock and salt, imparting a fresh and vibrant earthy taste that yellow onions or powdered versions can’t quite pull off. They go in at the very start with the butter, and help form the backbone of the roux. While this recipe uses old friends thyme and rosemary, there are many different combinations of herbs that can work together to keep it lively.

It’s good to have a high quality chicken gravy you can create in just minutes, when things may mess up, or your dishes change complexion. I can’t believe that I never used to spend ten minutes making a gravy from scratch when it has such a huge impact on the flavor of my favorite dishes. Better late than never I suppose! I can now do all sorts of gravy, jus, and sauces. My taste buds – and family – thank me for it!

Ingredients
  • 3 tablespoons unsalted butter
  • 2 green onions, finely chopped
  • 3 tablespoons all purpose flour
  • 1-2 teaspoons fresh thyme, finely chopped
  • 1-2 teaspoons fresh rosemary, finely chopped
  • 2 cups chicken stock
  • Kosher salt and black pepper, to taste
Preparation
  1. Melt butter in a small pan at medium-high temperature. Add onions and cook for 2 minutes, stirring continuously.
  2. Add flour thyme, rosemary, salt and pepper, and half of the chicken stock into the pan. Stir in together, then whisk for one minute. Add the remaining chicken stock, and cook for one minute, or until the gravy has thickened to your liking.
  3. Taste test the gravy and adjust flavors if required (more rosemary/thyme). Remove from the heat and transfer to a gravy boat or dish. Season the gravy with salt and pepper, to taste, and serve immediately.
