Inspired by Selena Gomez’s favorite late-night snack, this recipe combines buttery crackers, grated mozzarella cheese, and crispy pepperoni to make one delicious and savory bite. Whip these up in less than 10 minutes and satisfy your taste buds with the cheesy saltiness of these crackers. Simply dollop each pizza bite with a little bit of store-bought marinara and BAM! I used to eat cheese and pepperoni like this at every family get together. My mom started to host and she would always have so much leftover cheese and pepperoni, so I would make these little crackers. A bit more of an amateur version, but it was satisfying. Let’s amp up that old school version.

Making these crackers with just pepperoni, cheese, and crackers is a great start to a good recipe, but it needs a little more pizazz. My main concern was getting the pepperoni nice and crispy, which doesn’t happen when you microwave these. Turn the oven, melt your cheese over your crackers and place your pepperoni on a separate pan to crisp up. This allows the pepperoni to cook in it’s own fat and get crispy. If you put the pepperoni on top of the cheese and crackers it would just stay soft and get the crackers very greasy. Speaking of greasy, let’s get the crackers amped up now.

An easy trick to seasoning crackers just involves adding more fat, so butter, and adding some spices. I LOVE ranch powder, especially to make a homemade ranch or a spinach dip. Why not toss these crackers in ranch to give them some extra garlic and oniony goodness. It’s so necessary!

Assemble the crackers together by dolloping a little teaspoon of room temp marinara sauce for not only the perfect pizza touch, but to glue the crispy pepperoni to the cheese cracker. Keep these in a residually warm oven until guests arrive and serve! If the cheese seizes up, just turn on the oven and let get all gooey again. It’s so easy!

Pepperoni Pizza Crackers

Ingredients
- 6 oz. sliced pepperoni
- 48 Ritz crackers
- 1 lb. grated mozzarella cheese
- 1 cup of marinara sauce, plus extra for dipping
For ranch butter:
- 2 tablespoons ranch seasoning
- 1/2 cup unsalted butter, melted
Preparation
- Preheat the oven to 350°F and prepare two parchment-lined sheet trays.
- In a bowl, whisk together the ranch seasoning and melted butter until combined.
- Layer prepared sheet trays with Ritz crackers and drizzle with butter mixture. Top each cracker with grated mozzarella.
- Lay pepperoni slices evenly on the other prepared sheet tray.
- Bake the crackers and pepperoni for 15 minutes on the top rack of the oven, until the cheese is melted and the pepperoni is crispy.
- Dollop each cheesy cracker with marinara sauce, then top with crispy pepperoni. Enjoy!
