Pat's Bacon Rolls Hori-11

There’s something undeniably heavenly about the combination of cream cheese and bacon. A rich and creamy spread paired with indulgent, crispy bacon– it’s bound to be a hit every time. My grandma Pat knew that as well as anyone, and that’s why her Bacon Rolls were on repeat every Christmas Eve. These little bites sure pack a whole lot of flavor in the cutest bacon-wrapped package. Let’s get into how they’re made…

To start things out, you need to make the filling. It’s a simple mixture of softened cream cheese, garlic powder, onion powder, and pepper. Feel free to get more creative with the spices here if you want to kick things up a notch! You’ll then spread the cream cheese mixture onto a slice of sandwich bread and cut the bread slices into strips slightly wider than your bacon slices. Roll the strips tightly, then wrap a slice of bacon around the outside and pop a toothpick through it so it’s secured. Keep on rolling until you’re out of bacon, then bake the bites for just over 20 minutes, or until they’re nice and crispy.

  • 1 loaf white sandwich bread, sliced
  • 16 oz uncooked bacon slices
  • 2 (8 oz) packages cream cheese, softened
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
Preparation
  1. Preheat oven to 375 and lightly grease a 9x13-inch baking dish.
  2. Cut slices of bacon in half, then set aside.
  3. In a medium-size bowl, mix together the softened cream cheese, garlic powder, onion powder, and black pepper.
  4. Cut the crust off the bread slices and spread on the cream cheese mixture to cover the whole slice, then cut each slice of bread in half or in thirds, depending on the size of your bread.

  7. Serve warm, with a pepper jelly or jam for dipping if desired.
