Everyone needs a good chicken marinade recipe up their sleeve, and if you don’t already have one that you love, allow me to introduce you to my favorite. Mom’s Chicken Marinade is made with pantry and fridge staples and gives you the most flavorful and moist chicken with so little work. Whether you’re meal prepping chicken for the week ahead or just need a simple recipe to cook up some chicken for a tasty weeknight dinner, this recipe will serve you well!

The base of this marinade is made with olive oil and low sodium soy sauce. If you only have regular soy sauce on hand I recommend you reduce the amount to ¼ cup so your chicken isn’t too salty! Whisk in whole gran mustard, a little dijon, garlic powder, onion powder, and a splash of liquid smoke. A little fresh lemon juice rounds it out with a bright flavor and adds the perfect touch of acidity.

Pour the marinade over the chicken breasts in a ziplock bag and let them chill in the fridge for about 2-3 hours (I wouldn’t recommend marinating longer than 4 hours). When you’re ready to cook them up, preheat the grill or oven to 400 degrees and let them crisp up until they reach an internal temperature of 165 degrees. Meat thermometers are a game changers, pick one up if you don’t already have one and you’ll be so happy you did.
