Loaded Baked Potato Dip
A dip that combines all of the toppings you'd find in a baked potato.

Yes, a baked potato is amazing in all of its glory. Still, we can’t deny that a potato tastes incredible with all of the decadent toppings. This Baked Potato Dip is a combination of the toppings we love to pile onto a baked potato, all in one easy-to-make and easy-to-eat form!

This dip has no potatoes in it, but it’ll give you the taste of eating a fully loaded baked potato. Here cream cheese and sour cream are blended with ranch seasoning, salt, and pepper. The other toppings—cheese, bacon bits, and scallions — are folded into the mixture.

The dip is refrigerated for several hours before serving. Topped with additional cheese, bacon, and scallions, this dip is ready to go!

Its richness is well-balanced by the tang from the sour cream and the fresh scallion sprinkled throughout. Bacon adds a salty flavor as well as a textural variation to the creaminess of the cream cheese and cheese.

You can even make this into a hot dip by putting it into a greased pan, covering it with more cheese, and baking it until bubbling and golden. Whether you serve this Loaded Baked Potato Dip warm or cold, it’s a guaranteed party appetizer must!
Loaded Baked Potato Dip

Ingredients
- 8 ounces cream cheese, room temperature
- 8 ounces full-fat sour cream, room temperature
- 1 ounce package dry ranch dressing mix
- 1 cup shredded cheese, plus more for garnish
- 1/3 cup chopped bacon, plus more for garnish (from about 3 to 4 slices)
- 2 tablespoons sliced scallions, plus more for garnish
- Kosher salt and freshly black pepper, to taste
Preparation
- In a large bowl mix together cream cheese, sour cream, and ranch dressing, until smooth and lump free. Fold in cheese, bacon bits, and scallions. Season with salt and pepper. Wrap the bowl with plastic wrap and refrigerate for a minimum of 8 hours (preferably overnight).
- Garnish with additional cheese, bacon bits, and scallions. Serve with chips or crackers, enjoy!
- NOTE: You can also make a warmed up version by putting the dip in a greased oven-safe baking dish and bake at 350°F for 15 minutes or until golden and bubbling.
