Ingredients
- 8 cups Corn Pop cereal
- 2 (12 oz) bags white chocolate chips
- 1 tablespoon Coconut Oil
- 1/2 teaspoon peppermint extract
- 1/4 cup sugar sprinkles, optional
Preparation
- Line a large sheet pan with parchment paper, then set aside.
- Pour cereal into a large bowl, then set aside.
- In another medium-sized bowl, add white chocolate and coconut oil. Microwave in 30- second intervals, stirring in between, until chocolate is fully melted.
- Mix peppermint extract into the melted chocolate.
- Pour chocolate mixture over the cereal and mix until evenly coated.
- Transfer mixture to the baking sheet and spread into an even layer. Dust top with sprinkles.
- Allow bites to fully cool, then break into small pieces.
- Store in an airtight container.
