There’s something so nice about a simple fruit cake, especially when it comes together with ingredients you probably already have in the kitchen. This Everyday Berry Cake is exactly that kind of dessert. It’s easy to make, lightly sweet, and packed with juicy berries. Blueberries, raspberries, or a combination of both work beautifully here.


The batter is made with melted butter, sugar, milk, and vanilla. Once the wet ingredients are combined, the dry ingredients are gently mixed in before half of the berries are folded right into the batter. The rest go on top, giving the finished cake plenty of color and berries in every bite.


A sprinkle of sugar over the top adds a lightly crisp, sweet finish as the cake bakes. It comes out soft and tender with golden edges and pockets of warm berries throughout. Everyday Berry Cake
Ingredients
- 1/2 cup butter, melted
- 3/4 cup granulated sugar
- 1 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup whole milk
- 1 teaspoon vanilla extract
- 1 1/2 cups berries, blueberry and/or raspberries
- 2 teaspoons granulated sugar, for topping
Preparation
- Preheat the oven to 350 degrees F and grease an 8x8-inch baking dish or 8-9-inch pie dish.
- In a medium-sized bowl, sift together flour, baking powder, and salt.
- In a large bowl, mix the melted butter and sugar until smooth, then mix in the egg, milk, and vanilla. Mix until just combined.
- Slowly add the dry ingredients until no dry spots remain, then gently fold in about half of the berries. Transfer to the prepared baking dish.
- Sprinkle remaining berries on top, then sprinkle with the 2 teaspoons of sugar.
- Bake for 35-40 minutes, or until an inserted toothpick comes out clean.
- Serve warm with ice cream or whipped cream.
