That’s where this easy Dinner Roll Olive Bread comes in. Made with frozen dinner rolls, this shortcut recipe delivers a beautiful loaf that tastes like it came straight from the bakery. With a little bit of prep and a whole lot of flavor, it’s the perfect addition to any meal.

This recipe starts out with frozen dinner rolls. These can be found at most grocery stores, we went with the brand Rhodes. While the process is super simple, it does require 3-4 hours of rise time so you’ll want to plan ahead with this one! Toss the frozen rolls with olive oil and layer then in a loaf pan with roughly chopped olives and some dried oregano. Cover the pan with plastic wrap and let those rolls rise at room temperature until they’re nice and puffy. Preheat your oven and top off the loaf with some shredded parmesan, then it’s time to bake.

A quick half hour in the oven turns the loaf in a golden, bubbly masterpiece. And if the top starts to brown a little too quickly, just cover it with foil for the last 10 minutes to allow the middle to finish baking. Ingredients
  • 1 bag frozen dinner rolls (like Rhodes)
  • 2 tablespoons Kalamata olives, chopped
  • 2 tablespoons green olives, chopped
  • 2 teaspoon oregano
  • 2 tablespoons olive oil
  • ⅔ cup parmesan cheese, shredded
Preparation
  1. Grease a loaf pan with cooking spray or olive oil.
  2. Add a layer of frozen rolls to the loaf pan and toss with 1 tablespoon olive oil.
  3. Sprinkle half the olives over first layer, then arrange another layer of frozen rolls on top. Sprinkle on remaining olives, oregano, and a drizzle of olive oil.
  4. Cover and allow rolls to rise for 3-4 hours.
  5. When ready to bake, preheat oven to 350 degrees F.
  6. Sprinkle parmesan over loaf and bake for 30-35 minutes. Cover with foil for last 10 minutes if top is over browning.
