Thankfully, we have an easy solution to that problem: the Denver Omelet Egg Bake. This casserole takes all the ingredients you know and love in a classic Denver omelet and transforms them into an egg bake perfect for feeding your whole crew!

You’ll find the usual suspects in the recipe: eggs, diced ham, red and green bell pepper, onion, and cheddar cheese. Sneaking in that many veggies certainly feels like a healthy win to us! Not to mention the eggs provide a great source of protein to start your day. If you’re not much of a morning person, this casserole can easily be prepped the night before and popped in the oven when you’re ready to eat the next day.

Ingredients
  • 8 eggs
  • 1 cup half and half
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • ½ cup cooked ham, diced
  • ¾ cup cheddar cheese, divided
  • ⅓ cup diced onion
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
Preparation
  1. Preheat oven to 350 degrees F and grease an 8x8 baking dish.
  2. In a large bowl, whisk together the eggs, half and half, paprika, salt, and pepper.
  3. Add the ham, ½ cup of the cheese, onion, and peppers to the egg mixture and stir until evenly combined.
  4. Transfer mixture to the prepared baking dish and sprinkle the remaining ¼ cup cheese on top.
  5. Bake for 40-45 minutes or until the center has fully set.
