How Do You Make Brown Butter Apple Dumplings?
Preheat the oven to 375 and butter a 9×13 dish. Then brown the butter in a small saucepan over medium heat, swirling often, until it turns amber and smells nutty. That flavor comes from the milk solids toasting in the pan, so watch closely, since it goes from browned to burnt fast. Let it cool slightly, then stir a couple of tablespoons into the brown sugar, nutmeg, and salt to make a thick paste.
Next, roll out the pastry and cut six squares, each big enough to wrap an apple completely. Set an apple in the middle of each one and pack the hollow core with that brown butter paste. Push a cinnamon stick down through the center, leaving the top poking out like a little stem. It flavors the apple from the inside out, and it looks adorable. Gather the pastry up and around the apple and pinch it firmly at the top so it stays sealed in the oven.


Nestle the dumplings into the dish, brush them with egg wash, and sprinkle with coarse sugar for shine and a little crunch.

For the sauce, brown more butter, then whisk in brown sugar, water, and vanilla and bring it to a simmer. Pour it around the dumplings rather than over them, so the tops stay crisp while the bottoms soak up all that caramel. Bake for 35 to 40 minutes, basting once or twice, until the pastry is deep golden and a knife slides easily into the apples. Let them rest for 10 minutes so the sauce can thicken up.

For the Dumplings
- 2 sheets store-bought puff pastry
- 6 medium Honeycrisp apples, peeled & cored
- 2 tbsp butter, browned
- 1/2 cup packed brown sugar
- 1/4 tsp ground nutmeg
- pinch kosher salt
- 1 egg, beaten with a pinch of salt
- coarse sugar for sprinkling (optional)
- 6 cinnamon sticks
For the Sauce
- 4 tbsp butter, browned
- 1/2 cup packed brown sugar
- 1 cup water
- 1/2 tsp vanilla paste (or extract)
For the Dumplings
- Preheat oven to 375°F and butter a 9x13-inch baking dish.
- Brown the butter in a small saucepan over medium heat, swirling frequently, until it turns amber and smells nutty, 4-5 minutes; set aside to cool slightly.
- In a small bowl, stir together the brown sugar, nutmeg, salt, and the browned butter to form a paste.
- Roll out the pastry and cut into 6 squares large enough to fully encase an apple, about 8-inches square
- Place an apple in the center of each square, fill the cored center with the brown sugar mixture, press a cinnamon stick through to the bottom (allowing it to stick up a bit like a “stem”), then gather the pastry up and around the apple, pinching to seal at the top.
- Place dumplings in the prepared dish, brush with egg wash, and sprinkle with coarse sugar.
For the Sauce
- For the sauce, brown the butter in a small saucepan, whisk in the brown sugar, water, and vanilla, and bring to a simmer.
To Bake
- Pour the sauce around the dumplings in the baking dish.
- Bake for 35-40 minutes, basting once or twice with the sauce, until the pastry is deep golden brown and the apples are tender when pierced with a knife.
- Let rest 10 minutes before serving warm, spooning extra sauce over each dumpling.
