For this recipe you’ll need only eight ingredients, most of them pantry staples. To start things out you’re going to brown the butter. If you’re not familiar with this process don’t worry, it’s really quite simple. You’ll heat one stick of butter (half a cup) in a medium-sized saucepan until it begins to boil. At this point you’ll want to continuously swirl the butter around in the pan to continue cooking, but avoid burning. The butter will start to darken and you’ll know it’s time to remove it from the heat when it’s amber in color.

While the butter is still warm, stir in the brown sugar until completely combined, then add in the eggs and vanilla. Next up will be the dry ingredients: flour, baking powder, and salt. Give it all a good stir and once the batter has come together you’ll fold in the most important ingredient… coconut! At this point, the batter is ready to be spread into a 8×8 baking dish and popped in the oven.

The bars will bake for 40-45 minutes depending on how crispy you’d like the top. The name “Chewies” is not an exaggeration here. These bars will be soft and buttery on the inside so you’ll want to let them fully cool before cutting into them, this way they’ll hold their shape better. That’s a tall task when they smell amazing, but trust us, they’ll be worth the wait!
