Ingredients
- 16 oz macaroni pasta, cooked and drained
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 english cucumber, diced
- 1 1/2 cups shredded Italian blend cheese
Dressing
- 2 pouches Italian Dressing mix
- ⅓ cup white vinegar
- ¼ cup olive oil
- 1/3 cup mayo
- salt and pepper to taste
Preparation
- Add all salad ingredients to a large bowl and set aside.
- In a small bowl, mix together all dressing ingredients until smooth.
- Pour dressing over salad and mix until well coated.
- Cover and chill for 1 hour before serving for more flavor.
