Cheese and chicken wings at first glance sound a bit strange, but walk with me for a minute. Spiced baked chicken wing tossed with barbecue sauce and topped with smokey gouda cheese. Make this at a party for a cheesy twist on the classic bbq wings or simply refresh your leftover chicken wings in this cheesy bake.

The bake is a byproduct of all the components that go into it. When you toss them in a pan and sprinkle with grated cheese it becomes a “bake”.

Spice roasted chicken wings are the real MVP of this dish. A properly cooked wing is like heaven on Earth as it just falls off the bone. I like to roast my chicken wings with a spice blend I call my “chicken spice”. It’s a combination of onion and garlic powder with a dash of smoked paprika and black pepper. Without these spices the chicken would have very minimal flavor and we want the BBQ sauce to complement the chicken’s flavor.

Roasted chicken tends to be my favorite way to go for my par cook. Some people prefer to boil their wings and some restaurants tend to pre-fry their wings to help create a moist texture. If you didn’t know, ALL of your favorite commercial wing places par-cook their chicken wings. This helps to cook the wings faster and give that fall-off-the-bone texture once they’re done. The trick to these wings is flipping them so they get brown and crispy on both sides.

Layer your spiced and sauced wings in your preferred baking dish and top with a smoked cheese. The cheese doesn’t melt all the way, yet just enough to coat each wing and give that extra smokiness.

These wings are my favorite to serve to a crowd of hungry party-goers. Whether it’s a late night or summer afternoon these wings are always a hit.
