There’s just something comforting about walking into the kitchen to see a homemade coffee cake sitting on the counter. I have always loved coffee cake, mainly because I can’t resist a streusel topping, but this Berry Streusel Coffee Cake takes breakfast cake to another level. It not only has that delicious streusel you know and love, it also has juicy bursts of berry in every bite to go along with the soft, buttery cake. What I’m saying is, it’s a delightful thing to have on your kitchen counter, just don’t be surprised if you keep coming back to it all day long. And since it comes together in just 15 minutes of prep and bakes in one pan, it’s as easy as it is impressive. A true celebration of fresh berry flavor. (And streusel!!)

What Ingredients Do You Need for Berry Streusel Coffee Cake?
It’s mostly made up of pantry staples. (And a little fresh fruit.) You’ll need:
- Eggs.
- White sugar.
- Vanilla extract.
- Butter.
- Milk.
- Baking powder and salt.
- All-purpose flour.
- And mixed fresh berries — strawberries, blueberries, and raspberries. (The more color the better!)

Can you use frozen berries?
Fresh berries are ideal here since frozen berries release more liquid as they bake and can make the center of the cake more wet and dense. If fresh berries aren’t available though, you can use frozen — just don’t thaw them first and add a few extra minutes to the bake time. But if you can get fresh, go with fresh!

How Do You Make Berry Streusel Coffee Cake?
This is a straightforward, one-bowl cake that comes together quickly and bakes up beautifully every time. The streusel topping only takes about two minutes to make with your fingers and is absolutely worth every second. (But a streusel topping is always worth it, if you’re asking me.)

Here’s how it all comes together:
Beat the eggs, sugar, and vanilla together until light and frothy. This step gives the cake its tender texture, so don’t rush it.
Stir in the melted butter and milk, then fold in the flour mixture until it just comes together. Pour the batter into a 9×13 pan and then scatter the berries generously over the top. If you’re using strawberries, you’ll want to slice or chop them, but other berries can go on whole.

For the streusel, add cold chopped butter, sugar, and flour to a small bowl and use your fingertips to work the butter into the dry ingredients until you have a crumbly mixture. Sprinkle that evenly over the berries (and don’t be shy about it) and slide the whole thing into the oven for about 40 minutes, until the top is golden.
Serve it warm with a cup of coffee and try not to eat half the pan before anyone else wakes up!

Ingredients
- 3 eggs, at room temperature
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/2 cup (1 stick) butter, melted
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 1/2 cups all-purpose flour
- 3 cups mixed berries
For the topping:
- 4 tablespoons (1/4 cup) cold butter, chopped
- 1/3 cup granulated sugar
- 1 cup all-purpose flour
Preparation
- Preheat oven to 350°F and grease a 9x13-inch baking pan with butter or nonstick spray.
- In a mixing bowl or the bowl of a stand mixer, beat together the eggs, sugar, and vanilla until light and frothy, 3-5 minutes. Mix in the butter and milk until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt and then stir the mixture into the wet ingredients. Pour batter into prepared pan.
- Sprinkle berries over the batter. (Chop or slice strawberries first, if using.)
- To a small bowl, add the butter, sugar, and flour, for the topping. Using your fingers, incorporate the butter until mixture is crumbly but combined. Sprinkle over berries.
- Bake until a toothpick inserted into the center comes out clean, about 40 minutes.
- Let cool for 10 minutes, then slice and serve right from the pan. Enjoy!
