If it happens to also be healthy and delicious then you can bet that meal is going to be on repeat in our house! And that’s just the case with this Baked Greek Lemon Chicken. Juicy chicken thighs are marinated in olive oil, lemon juice, and Mediterranean spices for the most tender and flavorful results. If you need a new go-to chicken recipe, this is the one.



I prefer to use thighs for this dish, but chicken breast would also work. Add the meat to a large ziplock or a bowl with a lid. You’ll then whisk that tangy marinade together and pour it over the thighs. Allow the chicken to marinate for at least two hours to really soak up that flavor. I’ve found it works well to make up the marinade ahead of time, then add the chicken a few hours before we’re going to eat.


Bake the chicken for about 40 minutes, or until the internal temperature reaches 165-175 degrees fahrenheit, ensuring the meat is cooked through but still nice and juicy. Baked Greek Lemon Chicken

Ingredients
- 8 boneless, skinless chicken thighs
- Juice of 2 lemons
- ¼ cup olive oil
- 4 cloves garlic, minced
- 3 teaspoons dijon mustard
- 3 teaspoons oregano
- 2 teaspoons thyme
- 1 teaspoon dill
- 1 teaspoon paprika
- 2-3 teaspoons salt
- 1 teaspoon black pepper
Preparation
- Place chicken in a large bowl or ziplock bag.
- In a small bowl, mix together all remaining ingredients until well combined.
- Pour the marinade over the chicken and cover or seal bag.
- Place in fridge to marinate for 2-6 hours.
- When ready to bake: Preheat oven to 350 degrees F.
- Arrange marinated chicken in a large baking dish and pour marinade over the top.
- Bake chicken for 40 minutes or until internal temperature reaches 165-175 degrees F. Broil for the last 2-3 minutes for extra color.
