7 Layer Cobb Salad Dip

A salad that I hardly ever crave, but I do crave this dip!

Everything should be a dip. The end.

Cobb salads have existed in the world for a while now and I’ve never been interested until an adult because there’s a lot of adult things in them. Blue cheese, hard-boiled eggs, sometimes ham, and even corn showed up. I don’t even think there’s a designated salad dressing for it which is why this makes for a PERFECT candidate to be a dip. Welcome in the cream cheese!

What makes this salad so delicious? Is it the crispy bacon, fresh tomato, green onion, grilled corn, boiled eggs, or just the dressing? Turns out it’s all of these ingredients combined with the dressing.

How do we make this a dip? We combine the ingredients in a beautiful ranch-y layered way. Starts with softened cream, like all the best dips. Mix it up with a little sour cream, a packet of Hidden Valley ranch powder, and this is the base to your dip. TOP TIP – Hidden Valley ranch powder works on EVERYTHING, and it also makes for the best ranch. Heaps better than the Hidden Valley ranch bottle.

Layer the dip with diced chicken to give it that satisfying filling edge. You don’t need to do anything to the chicken, you just need to press it into that ranch base. Finish layering the dip with shredded lettuce, tomato, corn, egg, bacon, and blue cheese, and then gently press the ingredients down. The pressing will help the dip stay together when scooping and letting it sit in the fridge will help it develop more flavor.

This is one of the three recipes I developed in part of a video series about recreating salads into dips. This dip was by FAR the best dip of the three. It may be my new favorite dip to bring to potlucks. Serve this up with some club crackers and share it with your family!

For ranch base:
  • 1 cup sour cream
  • 8 oz. cream cheese, softened
  • 1 oz. pkg. ranch mix
For salad:
  • 1 cup chicken breast, finely diced
  • 1 cup romaine lettuce, chopped
  • 3 Roma tomatoes, finely diced
  • 3 hard-boiled eggs, peeled and chopped
  • 3 green onions, thinly sliced
  • 1 cup grilled corn kernels
  • 6 slices thick-cut bacon, chopped
  • 3/4 cup bleu cheese crumbles
Preparation
  1. In a pan over medium-high heat, cook the bacon until crispy. Drain the chopped on a paper towel-lined plate. Set aside.
  2. In a mixing bowl, whisk together the sour cream, cream cheese, and ranch dip mix. Set aside.
  3. Assemble the dip in a glass serving dish by spreading the ranch mixture evenly on the bottom.
  4. Top in layers starting with the chopped chicken, shredded lettuce, diced tomatoes, chopped eggs, green onion, corn kernels, chopped bacon, and bleu cheese crumbles. Let sit in the refrigerator for 30 minutes up to 2 hours before serving.
  5. Enjoy with club crackers.
