Barbecue pork is simply divine, and we’ve got just the recipe to really get you inspired. Our pork not only has a marinade but also an injection of flavor into the meat that increases deliciousness. Pineapple pairs beautifully with the pork, but we’ve also taken this up a notch by adding heat, in the form of habaneros. We know that kind of spice isn’t for everyone, so feel free to modify with something milder or to just skip that ingredient completely. The sweet acidity from citrusy pineapple and apple cider vinegar helps make our pork loin practically fork tender. We cook this wrapped in tin foil to start, then finish on the grill, adding more flavor and those great grill marks.

Pork Loin

Ingredients

  • 2 pound pork loin
  • Pineapple slices with juice
  • 1 Habanero, diced and seeded
  • Chili Powder
  • Cilantro
  • Garlic
  • Apple cider vinegar
  • BBQ sauce

BBQ SAUCE

  • Barbecue sauce
  • Habanero
  • Apple cider vinegar
  • Garlic

Injection Sauce

  • Pineapple juice
  • Habanero
  • Chili powder
  • Garlic
  • Cilantro
  • Blend in food processor

Preparation

  1. Inject sauce into pork loin.
  2. Baste with barbecue sauce.
  3. Put pineapple rings on top.
  4. Cook in foil (to about 150°F).
  5. Finish on grill.
