Tex-Mex Crockpot Dinner

When life gets busy around here, the crockpot is my lifesaver. There’s nothing better than a meal I can set and forget, then sit down to a delicious meal come dinner time. This Tex-Mex Crockpot Dinner is one of my favorite easy recipes and once you taste it you’ll understand why. It’s warm, comforting, and filling– not to mention a breeze to prepare. If you’re looking for a meal that’s full of flavor and short on effort, this is the one!


The great thing about this recipe is it’s made up of a lot of pantry staples. We’ve got canned black and pinto beans, green chiles, taco seasoning, and diced tomatoes. Pour it all in the crockpot with a diced yellow onion and give it a good stir. For the chicken, you’ll want to cube it before adding it to the crockpot so all those bite-sized pieces soak up that flavor (and it cuts down on the cook time!). Sprinkle a packet of your favorite taco seasoning on top and let the slow cooker do its magic.


When the meal is about halfway through cooking, mix it all together to distribute the seasoning and ensure even cooking. Scoop it over a serving of rice, load it up with tortilla chips, sour cream, and your favorite toppings, or just enjoy it by the bowlful. Tex-Mex Crockpot Dinner
Ingredients
- 2 large chicken breasts, cubed
- 1 (15 oz) can black beans, drained
- 1 (15 oz) can pinto beans
- 1 (15 oz) can diced tomatoes with juices
- 1 yellow onion (diced)
- 1 (4 oz) can green chiles
- 1 packet taco seasoning
- 1 chicken bullion cube
- ¼ cup cornmeal
- 2 cups shredded Mexican blend cheese
- green onions for topping
Preparation
- In a large slow cooker, combine beans, tomatoes with juices, onion, and chiles. Stir to combine.
- Add cubed chicken and sprinkle taco seasoning over the meat. Place bullion cube on top.
- Cook on low 5-7 hours, or high 2-3 hours. Stir contents together halfway through cook time.
- Before serving, mix in cornmeal and sprinkle cheese over the top and cook for 20 additional minutes.
- Garnish with green onions and serve over rice, with Texas toast, or loaded with your favorite toppings.
