Every good party needs an appetizer that requires almost zero effort but disappears the fastest, and in my experience, that’s these Salami Roll-Ups. Almost universally loved, just three ingredients, no oven, no cooking at all… just salami, a good herby cream cheese filling, and a little patience while they firm up in the fridge. Slice them into rounds and watch them vanish before the rest of the spread is even set out. Everyone loves to see these!

Do I Have to Use Fresh Herbs?

No. You don’t have to do anything you don’t want to do. If you’re in a time crunch, you can use a flavored cream cheese instead of using plain and adding your own herbs. Or, you can use plain cream cheese and stir in a little dried parsley and garlic powder. Or, honestly, you can just use plain cream cheese by itself. It’s delicious no matter what.

How Do I Serve These?

You can simply set them out on a platter and let people pick them up. They’re bite-sized and they go fast! Or you can skewer them with a toothpick through the side for easier serving. I love them served on a Ritz cracker for a little crunch, but a forewarning — that can get pretty salty.

How Do You Make Salami Roll-Ups?

Start by stirring together your softened cream cheese, green onion or chives, and parsley until smooth — this is your filling, and it comes together in about a minute.

On a sheet of plastic wrap, arrange your salami slices in an overlapping single layer to form a rectangle, then spread your cream cheese mixture evenly over the top, leaving a small border around the edges so it doesn’t squeeze out everywhere when you roll.

Roll it up tightly starting from the long side, wrap it in plastic wrap, and chill until firm enough to slice cleanly — this is the only part that takes any real time, so plan ahead. Once chilled, slice into rounds and serve. Easy peasy!
