Tamari Pecans

Nuts are one of my go-to snacks whenever I’m feeling peckish, but they’re also a great way to dress up a salad with some crunch and extra protein. While I do love them plain, when roasted with some seasonings the result is very snackable and very more-ish. These Tamari Pecans have a sweet/savory thing going for them that makes them extra tasty and they are so simple to make.

The main flavoring in this recipe is the tamari. This is the gluten-free cousin of soy sauce with a richer, tangier flavor. This sauce is made from soy as a secondary product of making miso, but unlike soy sauce it doesn’t use wheat in the process. In terms of texture and appearance tamari is very similar to soy sauce and you can find them in the same section of the grocery store.

The method to making these seasoned pecans is super simple. Combine the tamari and spices with some molasses then stir in the pecans. After that it’s just a matter of baking them until they are toasted.

The sugars in this recipe mean that you’ll have to watch to make sure this doesn’t burn. My rule of thumb is to err on the side of caution whenever I’m making roast nuts or toasting sesame seeds or anything like that. These foods can get a sharp or bitter flavor if they get scorched and we don’t want anything to overshadow the delicious flavor of the sauce. The sugars in this recipe mean that you’ll have to watch to make sure this doesn’t burn.

This recipe does call for a bit of cayenne and you can make this as spicy or mild as you like. Personally I love a little kick, but even without it these nuts are still delicious.
