One of the best things about this casserole is that it comes together in just one bowl. A hefty two and a half cups of cottage cheese start things out with a solid amount of protein. We opted for frozen spinach in this recipe which makes preparation a breeze. Just make sure the spinach is fully thawed and then thoroughly squeezed to remove all excess moisture. No one wants a soggy casserole! Throw in a couple more seasonings and a bit of parmesan cheese for an extra kick, and your casserole is ready to be baked.

Ingredients
  • 2 ½ cups cottage cheese
  • 3 eggs
  • 1 (9oz) package frozen spinach, thawed and drained
  • ½ cup feta, crumbled
  • ½ cup diced yellow onion
  • ⅓ cup butter, melted
  • 3 tablespoons grated parmesan
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
Preparation
  1. Preheat oven to 350 degrees F and grease a 8x8 baking dish.
  2. In a large bowl, beat together cottage cheese and eggs.
  3. Add the rest of the ingredients and mix until well combined.
  4. Spoon mixture into the prepared baking dish and bake for 40 minutes or until center has set.
  5. Allow dish to cool for 10 minutes before slicing.
