The spinach and feta combo is a classic for a reason: it’s absolutely delicious. Earthy spinach is complimented perfectly by tangy feta flavor for the perfect balance of healthy and satisfying. The hearty casserole recipe we have for you today features those flavors in an easy bake that even the picky eaters are bound to love. It’s a great way to sneak in a few more veggies and can be served any time of day– breakfast, lunch, or dinner.
One of the best things about this casserole is that it comes together in just one bowl. A hefty two and a half cups of cottage cheese start things out with a solid amount of protein. We opted for frozen spinach in this recipe which makes preparation a breeze. Just make sure the spinach is fully thawed and then thoroughly squeezed to remove all excess moisture. No one wants a soggy casserole! Throw in a couple more seasonings and a bit of parmesan cheese for an extra kick, and your casserole is ready to be baked.
Serve this dish at brunch or alongside some grilled meats and a big salad for dinner. There’s no wrong time for a dish this tasty (and easy!). It goes especially well with other Greek dishes. The next time you’re in need of a fun new side dish, give this Spinach Feta Casserole a try. We know you’ll love it as much as we do.
