Ingredients
- 2 cups diced celery
- 1 1/2 cups pitted green olives, roughly chopped
- 2 tablespoon finely diced shallot
- 1/2 cup slivered almonds
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon white wine vinegar
- salt and pepper, to taste
- 1/3 cup grated parmesan
Preparation
- In a medium-sized bowl, toss together celery, olives, shallot, and almonds.
- In a small bowl, whisk together olive oil, lemon juice, vinegar, salt, and pepper until smooth. Pour dressing over salad and toss to combine.
- Right before serving top with grated parmesan.
