There’s a good chance you’ve heard of Marry Me Chicken, but have you heard about these Marry Me White Beans? If you aren’t familiar, the “Marry Me” sauce is a simple Tuscan style cream sauce made with sun dried tomatoes. It’s been circulating the internet for a few years now, and for good reason… it’s delicious! I have been on a big white bean kick lately so I decided to pair this famous sauce with my favorite legume, and wow, the results were so darn tasty.

The great thing about this recipe is that it all comes together on the stovetop, in just one skillet. You’ll start out by chopping a good five cloves of garlic and a handful of sundried tomatoes. Heat up a few pats of butter in the skillet and then add the garlic and seasonings. Once those are nice and fragrant, add the tomatoes, some veggie broth, and two cans of white beans. Let that mixture simmer for about five minutes, then toss in a handful of spinach and half a cup of half and half. Once the spinach has wilted, garnish the dish with fresh basil and it’s ready to serve.

Ingredients
  • 3 tablespoons butter
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon oregano
  • ½ teaspoon paprika
  • 1 teaspoon red pepper flakes
  • 1 cup vegetable broth
  • 2 (15 oz cans) white beans, drained and rinsed
  • ½ cup sun dried tomatoes, sliced
  • 1 cup spinach
  • ½ cup half and half
  • 1/4 cup fresh basil, chopped
  • Bread for dipping
Preparation
  1. In a large skillet, add butter over medium heat and stir until melted. Add garlic, salt, oregano, paprika, and red pepper flakes and cook for 1-2 minutes or until fragrant.
  2. Add broth, beans, and sun dried tomatoes. Cook for 4-5 more minutes, gently stirring a few times.
  3. Reduce heat to low then mix in spinach and half and half. Cook until spinach has wilted.
  4. Garnish with basil and additional red pepper flakes.
